I hope everyone had a great Halloween weekend and if you don't celebrate Halloween, I hope you were able to enjoy your weekend! I had a great weekend. I pureed my first pumpkin this weekend and it went very well. I know it doesn't sound like a big deal but for me it was great. I cut the pumpkin into large chunks then roasted it in the oven for 4 hours. I added about a cup of sugar to sweeten the pumpkin as it was cooking, since I didn't buy a baking pumpkin. I separated it into freezer Ziploc bags and froze it. I am going to use it to make my pumpkin pies for Thanksgiving as well as any pumpkin dish I can think of...its pumpkin madness!
